My personal favorite Christmas cookie. The lightness of meringue, the crunch of walnuts and oatmeal. What could be more perfect. Mom's Angel Puffs2 egg whites 1 1/2 cups confectioner's sugar -- sifted 1/4 tsp. Salt 1/2 tsp. Almond extract 1/8 tsp. Cream of tarter 1/2 cups walnuts, English -- chopped fine 1/2 cup quick oats -- uncooked Beat egg whites with salt until they hold a stiff peak. Add cream of tarter, sugar and flavoring. Beat five minutes more. Divide in half. Add nuts and oats to half of meringue mixture. Drop 1/2 inch balls onto greased sheet. Make an indentation and swirl the remaining meringue over top. Bake in a slow oven: 325 degrees for 15 - 18 minutes. Remove from sheet immediately.
